Enzyme complexes for activating yeast generation and ethanol fermentation

Introduction. Recent studies have shown the benefits of phytolytic enzymes to prepare grain wort in ethanol production. However, there is a lack data on effect phytases and their amount conversion polymers, ionic composition mash, efficiency yeast generation fermentation.
 Study objects methods. Wheat corn samples were treated with complex hydrolases, including phytases. Capillary electrophoresis determined mash. Gas chromatography measured content volatile metabolites.
 Results discussion. The key proteases. They improved polymers stimulated growth metabolism cells. Their synergism enriched assimilable nitrogen, phosphorus, other valuable minerals. In addition, it intensified Saccharomyces cerevisiae yeast, increased rate carbohydrate consumption, reduced formation side metabolites 1.7–1.9 times, mainly due higher aromatic alcohols. concentration phosphates remained practically unchanged during fermentation by end fermentation, was 2.4–5.1 times than mash without treatment. Finally, we identified optimal amounts that stimulating Conclusion. Phytases, whether used individually or together proteases, soluble macro- microelements, metabolism, directed synthesis, decreased by-products.
